The story goes that the Bangarpet Chaat originated in 1974 by R Panduranga Setty’s son who wanted to carry out the family’s legacy but put his own twist to it. That is when he invented the white paani puri. Till today, the best place to try out this chaat is Ramesh Chit Chat that opened in 1984. A fun fact is that the paani is not actually white, but clear. Cumin, green chillies, ginger, garlic and lemon are all ground together, steeped in the water and then strained to give it a transparent colour. How they get the colour to not change is a well-guarded family secret. The paani really packs a punch. It is spicy and potent. The paani puri here is served with green peas, chopped onions, carrots and coriander. The paani goes very well with the puri and its accompaniments and this is a must-try for all chaat lovers!
When you order a plate, the plate comes pre-plated with the clear paani in tow. You can pour as much as paani as you like or as little as you like. This will cost you just Rs 25! Some of the other items on the menu which you can try are the Special Dahi Puri that incorporates the creamy goodness of yoghurt, a burst of masalas, texture and embellished with rose petals, talk about going that extra step. The floating Paani Puri is also a fun dish where the puris are flooded with the white paani giving it that illusion that it is floating. Another fun addition is the spicy peanuts that add a level of spice and crunchy texture as well. Other dishes like the Special Paani Puri, Tikki Masala, Pizza Paani Puri and Bhel are all good options. Let's explore the ingredients used to create Bangarpet pani puri. The base of the puri is made from a combination of maida (refined wheat flour) and suji (semolina). This mixture is kneaded into a soft dough, which is then deep-fried until it's golden-brown. The crunchy shells are then filled with a mixture of potatoes, chickpeas, and spices. The mixture is spiced with red chili powder, cumin, and black salt, which gives it its signature flavor. Once the puri shells are filled, they are then dipped in a special pani (water) mixture. This mixture is made from cilantro, mint, tamarind, ginger, and other spices. The combination of spices gives the pani a unique, tangy flavor.
